INGREDIENTS:
2 extra large zucchinis
3 garlic cloves
1 onion
OPTIONAL: corn chopped off the cob or a cup of frozen peas
2 cups of dry Mung Beans ( or use buckwheat flour or chickpea flour)
1 tsp baking powder
1 tsp salt and some ground pepper to taste
Make flour from the dry mung beans in the Thermomix or high-powdered blender (skip if you’re using flour).
In the Thermomix or food processor add zucchinis, garlic and onion and chop until fine.
Combine the flour and the processed vege.
Add all of the other ingredients and mix gently to combine (don't blend the corn/peas if using).
Ensure consistency is that of a thick batter. If not, add more flour.
Fry in coconut oil, or bake until golden.
