This is a meal-in-a-salad! Definitely designed to satiate even the biggest of appetites!
INGREDIENTS:
1 cup of wholegrain quinoa, cooked
1/4 cup of cooked green lentils (you can use canned)
1 can of butter beans, strained and rinsed
4 gherkins, halved
1/2 medium red onion
1/4 large cucumber
1/2 red pepper
XL handful of fresh parsley
XL handful of fresh basil
10 large leaves of kale/lettuce/spinach
one ear of corn, cooked and chopped of the cob
2 avocados, chopped
salt & pepper to taste
Add quinoa, lentils, beans to a large bowl. Chop or pulse in a food processors or Thermomix the gherkins, onion, cucumber, pepper, herbs and greens until finely chopped. Add to the bowl along with the corn and avos and stir to combine. Season to your liking. Serve with the following dressing....
Blend together:
juice of 2 lemons
1 clove of garlic
3 tbsp of tahini
1 tbsp of honey or maple
3 tbsp of water or more if needed
salt and pepper to taste
