easy satay sauce

This sauce is our go-to for rice paper rolls and is derived from a Chelsea Winter recipe from Her plant based cookbook "Supergood".


The leftovers are perfect for a noodle salad or satay stir fry.


It makes a lot! You won't need to go light on the satay sauce in your rice paper rolls, that's for sure!


INGREDIENTS

1/2 cup peanut butter - smooth or crunchy (we love Pic's)

1 can coconut cream

3 tbsp tamari soy sauce

1 tbsp red curry paste

2 tbsp sweet chilli sauce

2 tbsp coconut sugar

Option to add extra salt


METHOD

Add all ingredients to a pot and heat gently, stirring often with a whisk until it comes together smoothly.


If you have a Thermomix - add all ingredients into the bowl, set Thermi to time 10 mins, heat 80 degrees, speed 2.5.
